Amchur Powder
Amchur Powder, also known as dry mango powder, is made from sun-dried unripe green mangoes, finely ground to bring a burst of tangy flavor to Indian dishes. This natural souring agent adds a fruity sharpness without the moisture of lemon juice or tamarind.
This masala is especially popular in Gujarat and Rajasthan, where it is not only used in pickles but also added to daily meals like theplas, khakhras, and curries to elevate the taste. A hint of asafoetida (hing) and turmeric adds depth and digestive properties.
Usage
Primarily used to prepare a variety of pickles (achar), it is also widely used as a seasoning in Indian snacks and side dishes. Gujaratis often sprinkle it on raw mango slices, boiled potatoes, or mix it with oil to enjoy with rotis and parathas.
